Nutter Butter Brownies

Delightfully Decadent, that's how brownies should be! Savor the intense chocolate flavour and creaminess, with the added peanut butter kick.

 

Ingredients:

Brownie Mix:

1/2 Cup (100 Grams) Soft Vegan Margarine

1 1/4 Cups (225 Grams) Fine Cane Sugar

175 Grams Silken Tofu

1 Vanilla Pod (1 Tsp vanilla extract can be used as substitute)

1 1/4 Cups (150 Grams) Plain Flour

1/2 Cup (60 Grams) Vegan Cocoa Powder

1 Tsp Baking Powder

Pinch of Salt

60ml Soy Milk

8 Tbsp Crunchy Peanut Butter

4 Tbsp Maple Syrup

5 Tbsp Roaster Peanuts

60 Grams Vegan Dark Chocolate

Topping:

150 Grams Vegan Dark Chocolate

1 Tsp Coconut Oil

3 Tbsp Smooth Peanut Butter

 

Cooking Instructions:

  1. Preheat Oven to 180 degree Celcius.  Line a 20cm x 20cm baking tray with baking paper. 
  2. To make the brownie mixture, beat the margarine until creamy using an electric mixer on its highest setting, gradually add the sugar while beating. Squeeze water out of the silken tofu gently and dab dry with some kitchen paper, then add to the margarine and beat gently until it is well combined.
  3. In a seperate bowl, combine the flour, vanilla, cocoa powder, baking powder and salt, then fold into the margarine and tofu mixture. 
  4. Mix the soy milk with 3 Tablespoons of the crunchy peanut butter and the maple syrup, then gradually stir this into the brownie mix. Finally, chop the peanuts and dark chocolate and fold these in, too.
  5. Put half the mixture into your baking tray and smooth it out. The put little dollops of the remaining crunchy peanut butter over the mixture before covering with the rest of the brownie mix. Smooth the surface and bake on the middle shelf of the oven for roughly 45 minutes. Remove from the oven, leave to cool completely and then cut into your chosen sizes.
  6. Transfer the brownies to a wire rack with grease proof paper under it.
  7. To make the topping, melt chocolate and chocolate over a bain-marie, stirring carefully, then spread this over the brownies.  Don't stress if the chocolate runs down the sides a bit.  Gently heat the smooth peanut putter and use a teaspoon to make designs in the warm chocolate topping. (A favourite design of ours is to make a few little blobs, then use a skewer to drag through the blob to create a heart shape)

 

And there you have it a great cruelty free recipe for Peanut Butter Brownies, it might pay to make 2 batches cause they are so good you'll want to keep one batch for yourself.
